Blue Anthocyanin CWD Powder is a natural color pigment obtained from an endemic blue corn plant. This product, available in powder form, is highly resistant to heat and light. It is a product that dissolves well in water. It gives a bright blue color in every product it is used. It is used in many different food sectors such as pastry, confectionery, beverage, ice cream. 

Anthocyanins, which are the most important group of plant pigments flavonoids, have the functions of signaling for microorganisms, protecting against pathogens, reducing the effects of biotic and abiotic stresses, apart from their important roles in the petal coloration of flowering plants. The basic structure of anthocyanins consists of two phenyl rings of 15 carbons. Two phenyl rings, called A and B, are connected to each other by a 3-carbon bridge. This bridge forms a third ring and is called the C ring. The increase in the number of OH groups attached to the B ring of anthocyanins causes their color to turn blue. According to the degree of hydroxylation, pelargonidin (orange and pink colored), cyanidin (red colored) and delphinidin (purple and blue colored) derivatives are formed, respectively. Since flowers can also accumulate mixtures of these pigment derivatives, an unlimited number of color variations can be created.

Analysis of anthocyanins can be done more easily and sensitively with the development of modern techniques and devices. Since the number of known anthocyanins is over 600, special solvents and special applications are required for the analysis of different anthocyanins. Appropriate extraction and isolation processes are followed by chromatographic separation and purification techniques. In the last step, quantitative measurements are made with spectroscopic techniques. NMR techniques are widely used for the characterization and identification of anthocyanins.
